This Pacamara showcases the remarkable complexity of the varietal, enhanced by carefully controlled anaerobic fermentation. Ripe papaya and mango bring generous tropical sweetness, while a lively note of lemon candy adds a sweet-and-sour brightness. Beneath the vibrant fruit, delicate black tea and velvety nougat create a smooth, layered body. As the cup develops, a rich finish reminiscent of chocolate ganache brings depth and balance. Intensely sweet, plush and distinctly funky, this is an expressive coffee that combines adventurous processing with the elegance we love from Los Pirineos.
Los Pirineos has been at the forefront of specialty coffee in El Salvador for generations. Developed by the late Gilberto Baraona and now led by his son Diego, the estate is renowned for its innovative approach to coffee cultivation, with a nursery housing more than 70 different cultivars.
Situated at 1,400 metres on the slopes of the Tecapa volcano, the farm benefits from sunny days, cool mountain breezes and rich volcanic soils. Sustainability remains central to Diego's work, from collecting rainwater for processing to maintaining beehives that support pollination. The estate also provides year-round employment for the local community, continuing a family commitment to quality and responsible farming.

Diego combines careful fermentation with precise drying to bring out the expressive character of this Pacamara. Following harvest, whole coffee cherries are placed in sealed barrels for 72 hours of anaerobic fermentation. Throughout this stage, Diego monitors pH and Brix sugar levels to maintain consistency and guide flavour development.
The cherries are then transferred to raised drying beds at Los Pirineos, where they dry slowly for approximately 25 days before reaching the desired moisture level for milling and export. This measured process enhances the coffee's tropical sweetness, layered complexity and distinctive candy-like character.
